How to make Ash doogh


Doogh soup is one of the traditional and delicious Iranian dishes that is cooked in different cities of the country in many different ways. The most famous types of doogh soup are Doogh soup from Tabriz, Shiraz, Sarein, Urmia and Rasht.



Ingredients for 4 people

Doogh 2 liters
200 grams of peas
Vegetable soup 750 grams
1 cup rice
Garlic 1 tbsp
Hot mint 2 tbsp
Hot onion 2 tbsp
Enough salt and black pepper


Recipe

first stage
First, soak the peas in a bowl for at least two hours before cooking, so that in addition to being easier to cook, the bloating will also be eliminated. Of course, it is better to soak the chickpeas completely from the night before and to change the water several times.

second stage
After the soaking stage of the peas is finished, rinse it with cold water and pour it into a suitable pot. Add a few glasses of water to the pot and put it on the heat until the peas are fully cooked.

third level
At this stage, pour 2 glasses of water to half a teaspoon of salt in a small saucepan and put it on the heat until the water boils, then wash the rice and add it to the boiling water and let the rice soften, then the rice. Add to the pot containing the peas.

The fourth stage
After washing, chop the vegetables that contain the same amount of parsley, dill and parsley and add them to the pot containing the peas and rice. If you want the stew to stay more colorful during cooking, add a little salt to the pot before adding it.

The fifth step
After adding the vegetables, we should not put the lid on the pot, as this will cause the vegetables to turn bad. After 30 minutes, add the cooked vegetables to the pot little by little and stir the soup at the same time so that the ingredients are mixed together.

Step Six
Local doogh is usually used for this dish, but if you do not have local doogh available, you can also use carbonated pasteurized doogh. After adding the dough, we should not put the lid on the pot because it may take the dough and spoil the appearance of the soup.

Step 7
After 15 minutes after adding the buttermilk, add some salt and black pepper to the soup. At the end, after the soup is ready, we put it in the desired dish and decorate it with hot onion, hot garlic and hot mint and serve.
